Day 5: Pumpkin Cheesecake!!

The London Girls (minus Libby and LewLew because they're poooooopers) went out for karaoke last night! It was AWESOME!! Not sure everyone else enjoyed our renditions of Britney Spears and The Spice Girls quite as much as we did, but who cares. Now Rush and I are in Huntsville for the weekend. It's FINALLY time for Under the Christmas Tree and, so far, it's been everything I've been waiting for :)

My daily creation is pretty good, but the consistency's a little off. Not sure how to fix that. Thankfully, as far as my family is concerned, taste is a lot more important than looks!

Recipe -Start with a box of No-bake Cheesecake mix. Make the crust as instructed on the packaging then place in freezer while you make the filling. Combine cheesecake filling mix, a teaspoon of pumpkin pie spice, 3/4 cup of milk, 3/4 cup of pumpkin, and 1/2 teaspoon of vanilla. Pour into crust and chill for a couple hours. We put Reddiwhip and cinnamon on top.

Tomorrow Marmee's going to teach me how to make her Brunswick stew!!
