Well, technically it's cottage pie but in America we don't distinguish between lamb and beef so very much. This is the dish that had a little * by it this week, meaning it was Rush's personal favorite. He was so excited, in fact, that he forgot to let me get my photo! I was on the phone with my mom when the timer went off so my sweet husband took it out... and immediately dug in. I said "I know you're not messing up my dish before I take a picture!" Silence. When I hung up and went to the kitchen, he had tried to fix it. Check out the bottom left corner :)
Recipe - Make some mashed potatoes (confession: we used a box of potato flakes - 4 servings). Melt half a stick of butter in a frying pan and add 1/4 freshly chopped onion. When onion is browned, add ground beef and cook until all the pink is gone. Add Worcestershire sauce, parsley, salt, pepper, and a drained can of mixed vegetables (carrots, peas, and corn). Simmer for about 5 minutes then pour mixture into clear casserole dish. Top with mashed potatoes and a fine layer of freshly grated cheese. Bake at 400 for 30 minutes.
I was not excited about today. I actually saved just enough Brunswick stew so I could eat that for dinner instead, but I have to say that I really loved the shepherd's pie! I'm pleasantly surprised. It was a special treat to pair it with a cup of Twining's English Breakfast Tea!! Mmmmmm
